can I just insert a toothpick?

Apparently lemon bars are done when the center doesn't jiggle when shaken. I ask you, when does a hot gelatinous substance not jiggle?

  1. I always overcook lemon bars. They get super chewy and stick in your teeth.

  2. I love them love them love them but have yet to find a really wonderful recipe for them. Ditto for lime bars.
